During What’s Cooking with the Library, we’ll talk about different aspects of cooking like pantry basics, ways to substitute those harder to find ingredients, and even cook simple recipes on-stream (we’ll let you know what the ingredients are ahead of time so you can cook with us!).
This week we're making Spring Onion Romesco!
6 green onions
3-5 garlic cloves
2 tbsp butter
2 fire-roasted red pepper (can be fresh or from the jar)
1/2 cup slivered almonds
1/4 cup tomato sauce
2 tbsp chopped fresh parsley
1 tsp paprika
1/2 tsp cayenne pepper
1/2 cup olive oil
2 tbsp sherry vinegar
1 lb pasta of choice
Salt/pepper/crushed red peppers to taste
